As far as I can tell from the description & notes at the end of the video, this is basic physical modelling sound synthesis. The mic seems to be acting as an exciter to the model, which is built with MuBu running in MAX (no doubt on a laptop off-camera). What's innovative is the use of a mic to sample among exciters in real-time, so it is to me a performance innovation. Also, the way the segments are chosen in response to the input must be pretty cool, and excellent work, but maybe not necessarily the 'invention of a new instrument'? Physical modelling has been around in pro synthesizers and software for a while. Still hasn't been fully explored though, as we can see here.
